Butcher Block Countertop Safety Factors

There are safety factors when choosing the material species for butcher block countertops. One question I often do not hear is, "Should I be concerned about triggering a nut allergic reaction if I choose a nut tree species, such as walnut?" Based on my short review, I could not find any conclusive and concrete information that would suggest the type of wood used as a cutting surface to be a trigger for allergic reaction. I could not find anything in the FDA that researched the subject. I have concluded that any risk can be isolated through proper finishing and minimal abrasive uses. By "minimal abrasive," I mean do not use the surface as a cutting board unless that is specifically what you intend to use it for. If you are going to be using the butcherblock countertop as a cutting surface, be sure to sand and seal it regularly with a food grade butcher block oil.
